Maria Stevens Indian Chicken

Maria Stevens Indian chicken in tomato cream sauce

1 Tbsp garam masala seasoning (see note)
1 ½ tsp ground ginger
½ tsp ground cinnamon

¼ tsp cayenne

note: garam masala is a spice blend, I usually make a bunch and then I have it when I need it. My mixture is: 1 Tbsp cumin, 1 ½ tsp coriander, 1 ½ tsp cardamom, 1 ½ tsp pepper, 1 tsp cinnamon, ½ tsp clove, ½ tsp nutmeg.

Sauce:
3 Tbsp butter
1 large onion, chopped
2 tsp. minced garlic
1 Tbsp. tomato paste
1 (15 oz) can tomato sauce
1 (14.5 oz) can diced tomatoes in juice
1 rotisserie chicken, cut into serving pieces and skin removed
1 (10 oz) bag frozen peas, plac in colander and run hot water on them to thaw
1/3 cup organic heavy cream

to serve with: hot basmati rice and or pita bread or for Paleo use cauliflowered rice

mix spices in a small bowl and set aside. in a pan, melt the butter and add onion cooking until just golden. Add garlic, tomato paste and spices and cook for 1 minute stirring constantly to prevent burning. Add tomato sauce and diced tomatoes, stir well. Add cream and peas and mix well. Cook until heated through but do not boil! At this point, you can either add the chicken to the pan, or just pour this over the chicken and mix it. (I find it easiest to just pour it over the chicken and stir it up).
