Kale is a delicious source of vitamins A and C, iron and – surprise – almost as much calcium as a serving of milk! The lemon adds extra C and helps the body absorb all the iron in the kale. Feta cheese lends richness without a lot of fat, plus vitamin D and calcium. Finally, the crunchy almonds provide essential fatty acids and vitamin E. Kale salad is a real cache of nutrition and flavor!
Ingredients:2 cups kale, washed, dried and chopped in fine strips
1 shot glass crumbled feta cheese
½ shot glass toasted slivered almonds
1 small avocado,chopped up
handful of grape tomatoes sliced in half
2 green onions,chopped
1 green apple,chopped
½ shot glass olive oil
Juice of half a lemon
a good squeeze of RAW honey
Celtic sea salt
Freshly ground black pepper
Place kale in a large bowl and set aside. To make the vinaigrette, squeeze the lemon juice into a small bowl and add salt and pepper. Slowly drizzle the olive oil into the bowl while whisking to emulsify the dressing. Adjust seasoning to taste before pouring as much vinaigrette as desired over the kale. Toss the salad and top with almonds and cheese.
