Paleo Coconut/Pumpkin Bars

  • 1 cup cooked organic pumpkin (could use canned pumpkin in a pinch)
  • 1/2 cup coconut butter (melted)
  • 2 eggs
  • 1 cup almond flour
  • 1 tbsp raw honey
  • 20 drops of liquid stevia
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/8 tsp cloves
  • 1 tsp baking soda
  • pinch of sea salt
  • 1/2 to 3/4 cup coconut flakes
  • coconut oil to grease pan
  • 8×8 inch baking pan
Pre-heat oven to 350 degrees.  Combine pumpkin, melted coconut butter, eggs, and honey in food processor and pulse until combined.  Add in almond meal, cinnamon, nutmeg, cloves, salt and baking soda and process until smooth.  Add in stevia last and adjust sweetness to desired level.  Pour into greased 8×8 inch pan (I used Pampered Chef stoneware).  Sprinkle with coconut and bake for 30 minutes or until toothpick comes out clean.
