Spanish Stewed Beef
Ingredients
- 1½ lb leftover grass-fed beef roast
- 1 medium carrot, 1 medium green bell pepper
- 1 jalapeno pepper, 1/4 c. jarred pimiento (or 1 whole fresh pimiento)
- 2 cloves minced garlic, 5 oz. chopped onion
- enough water to cover stew, 5 chopped Roma tomatoes
- 1 bay leaf (2 if small)
- ¼ tsp. each salt, black pepper, cinnamon
- 1/8 tsp. ground cloves
- 2 T. virgin olive oil
