Spanish Stewed Beef-Leftover Roast Recipe

Spanish Stewed Beef

  • 1½ lb leftover grass-fed beef roast
  • 1 medium carrot, 1 medium green bell pepper
  • 1 jalapeno pepper, 1/4 c. jarred pimiento (or 1 whole fresh pimiento)
  • 2 cloves minced garlic, 5 oz. chopped onion
  • enough water to cover stew, 5 chopped Roma tomatoes
  • 1 bay leaf (2 if small)
  • ¼ tsp. each salt, black pepper, cinnamon
  • 1/8 tsp. ground cloves
  • 2 T. virgin olive oil

Cooking Steps

Add all ingredients to a pot and bring to a small boil.Turn down low and simmer for 45 minutes.Checking ingredients and shredding meat and  stirring.You may have to add a little water.Serve with Guacamole,Salad,Salsa.
