Roast Chicken Under the Skin
Ingredients:- Whole Chicken
- Garlic, 6-8 cloves, minced
- 2 medium onions, quartered
- 2 large tomatoes, cut into thirds
- 1 lemon, cut into slices
- ½ tsp. whole black pepper
- ½ tsp. sea salt
- Preheat the oven to 450°F.
- Clean inside of chicken completely and place into a baking pan.
- Stuff the inside of the chicken with tomatoes, onions, garlic and lemons.
- Slice the skin, in several areas, and slide lemon slices under it, along with garlic, salt & pepper. Add the rest to the pan.
- Season the exterior of the skin with additional salt, pepper and more garlic. Squeeze fresh lemon over entire chicken.
- Place into the oven and roast for about 30 mins. Remove the pan from the oven and baste with liquid from the pan. Return to the oven and roast for additional 30 to 40 mins to achieve golden skin.
- Remove from oven, let the chicken rest for about 10 – 15 mins before serving. Enjoy!
