You will need the following ingredients:
1 bowl of chopped broccoli, 3/4 bowl of fat free feta cheese, 3 egg whites, 1 small leek, 1 onion, 1 green pepper, about a half cup of pine nuts, 2 table spoons of olive oil, 1 tea spoon of cumin, 1/2 tea spoon of corriander, 1/2 tea spoon of ginger, salt, pinch of black pepper.
Heat up the olive oil on a medium size sauce pan.
Chop the onion and saute until slightly brown.
Chop the green pepper.
Chop the broccoli in a small pieces.
Chop the leek.
Add the chopped veggies, pine nuts, and spices into the pan and saute until the broccoli and pepper is soft.
Crack the eggs and keep the egg whites.
Pour the egg whites into the pan and stir for another 3-4 minutes.
The last step is to sprinkle the feta cheese over the top of the dish.
