Paleo Apple Pudding and Ice Cream


Coconut/Apple Pudding:
  • 1 Can Coconut Milk
  • 2-4 tbsp Coconut Oil (added as a thickener)
  • 3 Apples – Skinned + Chopped (preferably organic – whatever kind you like)
  • Cinnamon to taste, I suggest using quite a bit
Place all ingredients in a pot and cook until apples are softened.  Pour straight into blender/food processor and blend until smooth.  Refrigerate until solid-ish, probably about a day, then ENJOY!
I will tinker with other fruit/berries and report back – I could see this working well with blueberries specifically.  Another way to do this is to use frozen bananas and blend those.

Tiffany's Coconut Apple Banana Ice Cream:


1 can coconut milk
2T coconut oil
1-2T raw honey
1 large apple cooked like the pudding
2 bananas chopped up
sprinkle of cinnamon

Blended all these.I was going to food process but mine is too small. Than put it in a container to freeze for 4-6 hours or overnight...Ice cream!!!My son loves this.
