Pete's Shepard's Pie Stuffed Baked Potatoes....

Get some large potatoes. These came from northern Maine. Depending on how many you make depends on the amount of the ingredients. Bake the potatoes around 400° til soft in the middle. Brown and season ground beef. Chop and cook bacon. Set aside. Heat some cream style corn in a sauce pan. Once the potatoes are done cut lengthwise about a third of the way down to remove the top to hollow out the potato. Just like you're making a regular twice bake. To make the mashed potatoes take the potato from the hollowed out potatoes. Add milk butter salt pepper and mix with a mixer till smooth. Add shredded cheddar and the bacon. Mix. Take the hollowed out shells add the warm cream corn on bottom then the ground beef and top with the potatoes. Put back in oven and brown the potato. You're more than welcome to make a recipe out of this and share. Also works well with beef stew and roasted chicken and veggies.
Now I would revise this with my own homemade cream of corn and nitrate free bacon and organic milk or goat's to make this a little bit healthier!
